Rainy Days and Ice Cream...

What a strange week it has been in the good old state of Minnesota. The week started out with rainy days, then the weather decided to throw in some crazy wind. By the end of the week we had our first snow fall!!! YIKES!!

So what do we Minnesotans do in this type of weather well...

... for starters...

... why not attend a soccer game in the blistering cold wind while it rains...
doesn't that sound fun?

... to celebrate the first snow fall why not go get Coldstone Ice Cream...
... not just a normal size either but instead a Gotta Have It...
... we were given free coupons... :)

... did we finish???
... NOPE ...
... we have plenty of leftovers.

What a great week it has been doing crazy college stuff. The Minnesotan winter has begun!!!

Jess' 1/2 Marathon

It called for an early wake-up call of 5:20 AM, but it was worth it. Abbie (my roommate) and I were up and making cinnamon rolls and coffee for the 1 hour and 45 min. drive to Mankato this morning. At 6 AM Austin (friend), Abbie and I got into my car and we hit the road at 6:05. Austin took a nap, while Abbie and I tried to stay awake. We arrived in Mankato at 7:50 AM, we even took a quick stop on the way. Jess' parents meet us at the starting line and at 8 AM the race began. Throughout the morning we followed Jess, cheered her and other runners on. We learned new cheers thanks to the running program they gave us. To end the race we cheered Jess on at the 12 mile mark, jumped in the car drove down the road, parked, RAN to the finish line so we could be there ready to record the event of her crossing the finish line. What an exciting day. at 10:02 she was done. We took pictures and we were in the car are our way back to school at 11:05. It was a great morning and Jess did amazing!!

Cinnamon Raisin Scones

I found this recipe on the weight watchers website. It was surprising very good and healthy. I tweaked it a bit, but it still is only 1 point for those of you who are on weight watchers website. Here it is...

Ingredients:
1 cup of all-purpose flour (you could use whole wheat flour to make it even more healthy)
1 Tbsp Sugar
1tsp baking powder
1/4 tsp baking soda
1/4 table salt
1 large egg
1 Tbsp margarine or melted butter
1/4 cup of raisins
1 tsp of cinnamon (about)
1/2 cup or 6 oz container of nonfat plain greek yogurt (I used Chobani yogurt)

Instructions

Preheat oven to 450 degrees. Coat a baking sheet with cooking spray

In a large bowl combine flour, sugar, baking powder, baking soda, salt, cinnamon, and raisins. In a small bowl combine yogurt, egg and margarine or butter. Add yogurt mixture to flour mixture, stirring until just blended; do not over-mix

Lightly flour a work surface and rolling pin. Roll out dough to a 1/4 inch thickness. With a sharp knife, cut into 16 wedges and place until golden brown, about 10 minutes. Cool on a wire rack for 10 minuets. I also sprinkled cinnamon on the top to add a little more flavor.

They are wonderful and very moist. This is the best recipe I have found yet!
